Roasted garlic is one of those things I never think to make myself though its really easy and is delicious, you can practically eat it all by itself but what better way to eat it then mashed in some pastured butter! I decided to add some chives to it and melt it on top of a nice, juicy, grass-fed ribeye. For my sides I stuck to an easy one, Roasted Brussels Sprouts and tried out a new one, Cauliflower Mash with sauteed squash, zucchini and onion, and why not throw some roasted garlic in there also!
